Fruits and Veggies Monday - Raw Chocolate Brownies with Berries
I've been missing in action for only a week, but it feels like a lifetime away from Steemit!
We took ourselves away down the coast to the sound of the waves and the sea gulls, the smell of the ocean and sights of dolphins and whales splashing deep in the sea, watching the sunrise on the east coast; it was absolutely glorious!
On this morning a ship was sailing past on the horizon as the sun rose.
What better way to start the week than making something for Fruits and Veggies Monday - decadent but super healthy Raw Chocolate Brownies made with Macadamia Nuts & Walnuts, superfood raw Cacao Powder, rolled Oats, unsweetened Peanut Butter, Coconut Oil, Dates and garnished with dark Vegan Chocolate, Coconut flakes, Strawberries and Blueberries.
No sugar yep, that's the best part; dates provided ample sweetening!
Is this Chocolate Brownie sugar-laden? Nope!
Is this a healthy treat?
The answer is a big YES and I will tell you a little about the health benefits of our two star ingredients.
In addition to that, there is the benefits of the nuts, oats and berries, making this a power-packed guilt-free Brownie indeed!
RAW ORGANIC CACAO POWDER
This Peruvian Superfood should not be confused with Cocoa Powder - it is cold pressed to retain the nutrients. It's loaded with flavonoids and magnesium and has many health benefits:

- Blood sugar control - Dates have the potential to help with blood sugar regulation due to their low glycemic index, fiber and antioxidants.

Recipe - Raw Chocolate Brownies
- 1 cup Macadamia Nuts
- 1/2 cup Walnuts
- 4 Tbsp Raw Cacao Powder
- 1/2 cup organic rolled Oats
- 250 gram Dates
- 1 Tbsp Coconut Oil
- 4 Tbsp Unsweetened Peanut Butter
Topping - 1/2 cup Vegan Choc chips + 1 tsp Coconut Oil
- Coconut flakes, Strawberries & Blueberries for garnishing
Easy peasy method - place nuts & oats in food processor and pulse till fine.
Add remaining ingredients & process till smooth.
Press into lined pan.
Melt choc chips & coconut oil over double boiler, spread on top of brownies.
Garnish with berries & coconut.
Place in freezer & cut into squares once it has set.
Delectable Chocolate Brownies.

I learnt about using dates as a sweetener from you, it's really so much nicer than sugar - no acid reflux after having one of these!

I saw his entry, just yummy! Dates really are my favourite, like date crunchies and also date squares but will have to tweak the recipes to be healthier versions ;)
