Background and some information about Simit

Simit’s history stands back 600 years before to The Ottomans. In the XIV century the Simit was cooked at the palace.  Later by later, it was started to be baked in Istanbul then it spread all around the Anatolia. There are also famous paintings which belongs to the European Artists, showing the Simit and its sellers to reflect the Ottoman culture from a different and warm perspectives.  

Today all around the Turkey in bakeries, peddlers , kiosks and corners you can find Simit. It is eaten up all time of the day especially in breakfast Simit with tea.. it is special. My advice is please try this delicious food with Ayran too. 

Let’s see how we can make Simit in our home.  

Ingredients  💕 

  • 1 cup of warm water 
  • 1 cup of warm milk 
  • ½ cup of oil 
  • 2 tablespoons of granulated sugar 
  • 1 dessert spoon of salt 
  • 1 dessert spoon of instant yeast 
  • Flour - as much as dough can handle, as much as dough stops sticking your hand. 

For the top of the Simit  💖 

  • Half tea cup of grape molasses 
  • 1,5 cup of sesame  


Process

 ✳️ Mix the milk, oil, sugar, salt and instant yeast in a large bowl. 

 ✳️ Then add flour little by little while kneading the mixture until it gives up sticking to your hand.

 ✳️ Next ,cover the bowl with strecth film and a few layers of clothes.

 ✳️ Finally let the mixture wait in a warm place for 2 hours to ferment.   

  

✳️ After picking off pieces from the fermented dough in tangerine size,  roll them and make it strip shaped. 

✳️ Then put two pieces of strip shaped rolls together wrapping around eachother.

✳️ Give it a round shape.

✳️ Mix the water and grape molasses in a large plate. (this mixture will make sesame to stick to simit) 

✳️ Dip the Simit’s one side into the grape molasses and water mixture.

✳️ Finally dip Simit into saseme. 

Now you can put your simit into oven but aware that the sesame side will be at the top.  

And don’t forget to lay the oiled baking paper on the tray before putting simit onto it. 

Finally let Simit rest for 25-30 minutes. 

✳️ After the resting period bake Simit at 180 C in pre-heated oven until its top turns red. 

Its now ready  🔔 😋
