Salmon strawberry salad recipe
This salmon salad is one of my favourite dinner recipe, it's easy and absolutely delicious!
I personally love the crispy skin but I know some of you don't really like fish skin so you can just get whichever you like.
Ingredients:
- 150 g salmon
- 30 g mixed leaf salad
- 50 g strawberries
- 10 g almonds
- 1 tsp olive oil
Dressing:
- 1 tbsp balsamic vinegar
- 1.5 tsp honey
- 1.5 tsp dijon mustard
- 1 pinch of salt
- 1/2 tsp black pepper
optional: - 1/2 tsp rosemary (dried)
- 1/2 tsp garlic powder
Method:
Heat oil in a frying pan over medium to high heat, add salmon fillet skin side down. Cook for 3-4 minutes until the skin has turn brown and flip to other side and continue to cook for 3 minutes. If your fillets is a bit thicker then cook on both sides as well.
In the mean time, wash strawberries and remove stems and slice them.
Combine all dressing ingredients in a bowl and stir well to combine.
Place mixed leaf salad, strawberries, almonds and finally the salmon on top, drizzle the dressing and serve.
