BEST Cabbage Rolls (old family recipe)
This recipe was from my great grandmother, it takes a bit of time to prepare the rolls but its TOTALLY worth it! my kid loves them and has me preparing them once a week for him.
INGREDIENTS:
2 big white cabbages or 3 medium white cabbages
1 kg of meat (half pork - half beef)
3 1/2 cups of rinsed rice (I use basmati rice)
3 tablespoons of curry madras (I use McCormick)
1 cup of vegetable oil
2 teaspoons of freshly ground black pepper
3 tablespoons of Knorr chicken powder
2 teaspoons of salt.
FOR COOKING BROTH:
4 tomatoes
2 tablespoons of Knorr chicken powder
juice of 2 limes
1 teaspoon of salt
DIRECTIONS:
In a big deep pot put water on a low boil, Cut out the cores of the cabbages with a sharp knife and carefully pull off all the rest of the leaves, keeping them whole and as undamaged as possible, (get rid of all the small leaves and use them for coleslaw or whatever.) Blanch the cabbage leaves in the pot of boiling water for 5 minutes, or until pliable. Next, carefully cut out the center vein from the leaves so they will be easier to roll up.
Mix meat, rice, curry powder, vegetable oil, black pepper, chicken powder, and salt.
Add the meat filling on a cabbage leaf (average a tablespoon or a tablespoon and a half depending on the size of the leaf) start rolling them.
On a big pot insert a steamer
Start arranging the cabbage rolls all in the same direction
Once you are finished rolling and arranging the cabbage rolls, in a blender add all the ingredients for the broth and blend until smooth.
Add liquid to the pot. It's important that the liquid covers cabbage rolls (just barely, if needed add more water with a bit salt for taste until you are able to cover them).
Add a plate on the top of the cabbage rolls so they don't move.
Put the lid on and cook them until the rice is tender.
WHITE SAUCE INGREDIENTS FOR SERVING:
1 cup of natural greek yogurt
juice of 1/2 a lime
salt
pepper
olive oil
Mix all this ingredients and enjoy by drizzling the yogurt sauce on top or on the side of your cabbage rolls.
