Steemit Iron Chef 2017 #01 Tomato Tempe Balls Overtop Spiced Eggplant Patties w/ Cashew Garlic Herb Cheese (Vegan Recipe)

How does spaghetti and meatballs a la vegan/gluten free sound to you all?

Mmmm... sounds yummy right? Good thing @steemitironchef requested the use of tomatoes as the ingredient for the first week running! Thanks to @progressivechef for launching this fun new competition that inspired this recipe! I know I will be a supporter of it! <3

Wait a minute-hold the phone! We're not using noodles, not using dairy, not using meat... so what are we going to do?

Let's get wild! A little creativity and we'll have something whipped up in no time!


Ingredients:

For the 'noodles':

  • 1 round eggplant (they call them 'round mauves')
  • 1 Japanese eggplant
  • 1 bunch green spring onions
  • 1 bunch baby bok choy
  • 1 bunch asparagus
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp pepper
  • 1 tsp pink Himalayan sea salt

For the 'meatballs':

  • 1 piece tempe (fermented soybeans)
  • 3 small tomatoes
  • 1 tsp coriander
  • 1 bunch chives

For the 'tomato sauce':

  • 7-10 small tomatoes
  • 3 cloves of garlic (sliced thinly)

For the 'cheese':

  • 1/2 cup soaked cashews
  • 3 chive stems
  • 2 garlic cloves
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1 tsp turmeric
  • Fresh dill
  • 1/2 lemon (juice)
  • 1 tbs coconut oil
  • Water as needed

Making it happen:


Part 1: Noodles

  • Slice eggplant into thin rounds carefully with a knife or mandolin
  • Pour coconut oil into a pan, add in spices and green onion for a couple minutes
  • Place each slice into the oil and make sure to distribute the spice all over by shaking the pan
  • Add in asparagus
  • Cook together on low until soft

  • Add bok choy to a pan with spice and oil on low, it doesn't need long!

Part 2: Tomato 'Sauce'
OK, it's not really 'sauce' it's more fun this way though, promise!

  • Slice tomatoes quite thin (not too thin or they will not hold together)
  • Put a tab of coconut oil in a skillet
  • Add in sliced garlic on low
  • Place tomato slices into skillet and swirl around to blend in with garlic
  • Let soften then remove from heat

Cashew Herb 'Cheese'

  • Put all ingredients into a food processor or personal blender
  • Add water as needed
  • Blend until desired consistency is formed

Tempe "meat" Balls

  • Cut tempe into smaller pieces
  • Take a couple of pieces of chive and chop into small sections
  • Cut 3 tomatoes into quarters
  • Put all ingredients plus spices into food processor and blend until mixture becomes sticky

  • Take small pieces out at a time and roll into balls
  • Place balls in some coconut oil on a skillet and fry all sides until crispy

Bon appetite!

  • Layer eggplant, asparagus and bok choy on the bottom of the dish (noodles)
  • Place tempe balls on top
  • Add on the garlic tomato 'sauce'
  • Serve with a side of cheese
  • Enjoy!

She would love my garden then! It was designed by a man who owns a nursery and garden shop so it's filled with all kinds of colors and shapes! I wish I could send them some! I guess I could make it into essential oils and send it that way? Somehow I think customs would have a fit though LOL

I can feel so much love in the dish my friend! Done with care and passion! The meatball illusion is just perfect! Finally the plating is very nice looking, good job dear!

How I loved tempeh in my nasi campur! Enak sekali.

Is tempe not common in India?

I don´t think so.
In India I used to eat only vegetables with chapati, naan, etc and rice in the south.
But now I´m in Germany anyway. I guess I could get it here, but pretty expensive I guess.
Nowadays I actually prefer seitan over soy products.

Oh wow, I have seen tempe available everywhere so I didn't even think of the possibility of not having it! The horror! See, I am getting mine from a local guy who grows his soy without any pesticides, he does it all organically from non GMO seeds to start out with and he hand makes it all. It's out of this world great quality! I can't have seitan because of the wheat. I was really battling soy for a while but I love that I have found a good source, otherwise I would avoid it too!

Well actually, I am very intrigued ;) Food is generally the way to motivate me! I moved to Thailand because I love Thai food... or thought I did until the MSG in everything tried to kill me ;)

I really do want to come visit you while gallivanting up that way in January!

As you know you are more than welcome. We have the whole month off on January... almost all our Belgian friends are coming over for the new year and two of them are gonna get married too... they are my best friends so if you happen to be here you can come and crash the party haha... you would be a welcomed guest! In Cambodia, MSG is a problem too, however things are changing and so many places are having a NO MSG sign now. Sugar is the true villain here... hence the skyrocketing diabetes numbers.

Oooooh well let me look into it, that would be so fun! =D
Ugh the dreadful MSG... I ate a peanut the other day and it was seriously SO good and I looked at the ingredients and it said "Bali spices, peanuts, sea salt" so I'm thinking OK, YUM! But my dogs were cracked out over them so I looked again and there was an msg label small on the back... Could not believe it! (Well, yes I can... I just don't like it!) Sugar is super bad everywhere, too bad we couldn't just outlaw it! In Thailand, I was doing a cooking class and she kept trying to put sugar in my dishes and I refused... she was getting ANGRY because I wasn't making it the Thai way haha oh my goodness... the sugar is a drug!

Haha. Sounds like Cambodia. They never can believe it when I order a lime juice with no sugar or fresh iced tea with no sugar. They always look at me like I'm from a different planet.

Oh I know that all too well. Actually, the other day I ordered a smoothie and it said all of the ingredients, including the water or whatever, I forget what it was but it was super detailed. On the table was sugar so I thought, obviously you add your own sugar, no sugar on the menu... right?

Drank it super fast because I ended up needing to go somewhere anddd then it hit me like crack.

I went back and they were like "What do you mean? Of course it has sugar, it would be so gross without it!" -_- I cannot.
