Delicious Home Baked Pumpkin Spice & Banana Carrot Cake Recipe

When its pumpking spice season and you don't trust shop ready made available treats, what do you do? I just make it myself 😊😁
I only chose organic ingredients where available and price is reasonable and definetly prefer to make sure of the quality that goes into the end result.

So full disclosure: I dont bake at all often so this is a super easy recipe and there's no possible way you can do it wrong or mess it up 😛😁 This in fact will be my 2nd time baking muffins since all times, so rest assured all will turn out delicious and without much effort. Make sure you preheat the oven at 375 F / 190 Celsius.

Start with good ingredients (the whole point of doing it yourself in my own view + therapy of cooking which I find playful and relaxing):

There's not much to it, really! So full recap on what I used:

1 cup of flour wholewheat
1 cup of almond flour
1 teaspon of salt
20g butter
5 big spoons of Agave Syrup
3 big spoons of Raw Honey
1 pinch of baking powder
2 organic eggs
300 grams of grated pumpkin
1 grated carrot
3 ripe bananas
Aprox 20 walnuts
5 big spoons of Organic Coconut Butter
Vanilla Extract
Cinnamon

And thats about it. Start by mixing the 2eggs with the agave syrup, then add in the melted butter (I used room temperature) until all is fluid and omogene. Then add in the salt and slowly the almond flower. Add last the wholeweat flour and the baking powder.

When the dough is done add the grated pumpkin, carrots and mushed bananas and mix until homogene. Add the honey and the coconut butter at the end.

I just filled 2 regular pans and improvised as the place that I'm curently renting doesnt have any baking pans.

Bake for 30 minutes at 375 F / 190 Celsius.

Let it cool and then indulge ❤😇😍😍

The end result should be a moist banana bread pumpkin cinnamon carrot cake combination 😊😀😍😍
