Vegeterian caviar. How to embrace stereotype

I'm Russian and thought I live in Australia for a long time I still like to embrace some stereotypes as part of my personality...from time to time.
Russian food been always the hard one for me, you see Russians eat meat with everything! Absolutely everything. Pelmeni and pirogi often searved with meat feelings, borsh is traditionally the meat dish, shashlik, reasted/fried you name it {beef, rabbit, horse, mutton, chicken, all sorts of fish, crabs ... etc etc} you get tge point. And then there is caviar and Russia is known for good caviar.
Imagine my disappointment being a vegeterian.
So now for all of those who are like me people are inventing vegeterian alternatives. Here is a vegeterian caviar
It's a mixture of balsamic vinegar to water, sugar, agar-agar, also known as vegeterian gelatine. Mixture is dropped in oil to form cute bubbles.

And then spread on bread with butter as per best Russian traditions ... or on tomatoe with mozzarella... Or any of your favourites foods.

Cool! So, how does it taste?
Half an hour tops. But I would recommend cooling oil first otherwise they start sticking together.
