It's Friday = Cake - 7 June 2024

I took a little break from my other activities and decided to make a cake to celebrate it's Friday.

I'm very pleased with the result although I did not follow the usual instructions to make a cake. This is therefore a variation with different amounts of ingredients. I'll tell you how I made it.

For the ingredients I used :

80g of butter
80 g of sugar
2 eggs
173 g of self-raising flour
7g of cacao
1tsp of baking powder
100g of frozen blueberries
40g of a chopped chocolate bar
1 tsp of vanilla extract
1/2 tsp of mixed spice
200ml of milk

First of all I had to soften the butter in the microwave for 15 seconds.
I then whisked it together with the sugar until the mixture looked creamy, lighter in colour, and I couldn't see any bits of sugar.
At this point I added one egg at a time whisking in between.
I then poured the wet ingredients into the mixture : milk and vanilla extract and whisked a bit to combine.
After that I put the frozen blueberries in, chopped chocolate pieces and before mixing together I sieved the flour, cacao and baking powder onto the mixture.
I mixed everything together really well with a plastic spatula trying to make a figure of 8 but I am not sure if that worked out.

I poured this aromatic mixture into a lined 20cm cake tin and into a preheated oven at 160 C.

I waited for 20 minutes and then another few minutes until it looked dry on top. Altogether it was 26 minutes.

I used a toothpick to test that the centre was well baked and decided it was ready.

The cake is not oversweet and with the blueberries it is very moist.

I'm happy with this cake because it is not so rich and decadent. I've seen recipes that include 200g of sugar : I try to avoid that on health grounds.

When I cut the cake there were 12 slices now there are 9 left so I reckon it's been well received.

I don't think you can go wrong with an organic and Fair Trade chocolate bar or blueberries.
