Rick has a portal gun that can take him to an infinite number of universes. He could find an infinite number of worlds where he's already king. He could kill himself there and take any of them, or find one where he died and step in to take his place, like he and Morty did after they blew up the world.

Rick already has technology that's thousands of years more advanced than Earth has now. He could sell any one of those inventions and become a millionaire, but he doesn't. Why? Probably because he already has... more or less.

He's traveled to the end of space and time and enjoyed everything existence has to offer... and got bored with it. This (and the death of his wife) is why he's so depressed and alcoholic. The joys of the world have lost all meaning to him. In one episode, Rick gives Jerry $500 to buy ice cream without blinking. He can't even remember the word "dollars" because money is so unimportant to him.

Living life with infinite powers is like playing a video game with an ultimate cheat code. Our struggles give life meaning, not the rewards. Rick could go anywhere and do anything, but he chooses to stay with his family because he's learned the two most important things in life are being with the people you love, and doing the things you love. Mr. Meeseeks would take that away from him. In fact, Rick being Rick, he probably already tried creating a plantation of Mr. Meeseek slaves and got bored with it.
