Cocoa is a fruit of tropical origin with which chocolate is produced. Its importance in the economy of the colony was enormous, since it was one of the products of the new continent most coveted by the Europeans. It is grown in shrubs of 2 to 3 meters that must be in the shade, which is why it is usually found under larger trees such as cedar, bucare, mango, or banana, among others ...
The cacao tree normally has between 10 and 15 fruits, but sometimes it can reach 20.
There are two types of cocoa: one is red and when they mature they become purple and the other is green and when ripe it turns yellow.
The cocoa has seeds that can be sucked like a sucker or a soursop. These seeds are covered by a gelatinous substance. They are sweet and very tasty.
When the cocoa is ripe, it is cut from the tree and left in the shade on banana leaves for 3 to 6 days, to ferment. It is important that it has humidity, but it can not be wetted with rain. Then, it is put in the sun for drying another 3 to 6 days.
When the beans are already dry they are roasted in an oven and then the husk is removed and crushed. Finally, sugar and milk are added to prepare the chocolate.
