Vegan For Two

This is a simple meal for two, you don't have to be vegan to enjoy this.
so, here we go, this is how you prep this meal...
*wash your sweet potatoes, slice them to your desired chip size and place them on a baking, add salt and pepper along with any other herbs of your choice.
preheat the oven to 200c and then bake for approx 30/35 mins, make sure you turn them over half way.
*prepare the plantain by slicing them to your desired size,
*prep the spinach, wash the spinach leaves thoroughly,
*vegan Quorn fish fingers, when you turn over the sweet potatoes fries, you can add the vegan fish fingers in to the tray to bake in the oven for 15 mins. (always read the labels) follow the cooking instructions.
*now get two pots, one for the plantains and one for the peppers and spinach, or you can use the same pot and do it one after the other, its up to you.
*add one table spoon of vitalite dairy free vegan butter to the pot you'll be making the pepper and spinach in.

*add one table spoon of coconut oil for frying the plantains
cook them for about 6/10 mins each, the plantains can be a little burnt its okay, once they are golden brown or slightly burnt you can add some salt and thats it.
by this time the oven should be done with the sweet potatoes, and you can now present the food on a plate all in good time and the food will be nice and hot ready for you to enjoy.
