Shortbread cookies are a delight, as well as easy to prepare. You can make them at home and decorate them with meringue, royal icing or fondant ... ideal for a birthday party, baby shower or any celebration.

Ingredients

2 eggs
2 1/2 cups of flour, (350 g)
1 teaspoon liquid vanilla
1 teaspoon baking powder
100 grams of butter
1 cup of sugar, (200 g)

Preparation

To start with the preparation of homemade butter cookies, take a container and mix the butter with the sugar. This process can be done by hand with a spatula, you will see how the butter clears up, forming a very creamy dough.

The next step is to add the eggs and vanilla. Continue stirring with the spatula until they are completely integrated. If you find it very difficult to knead the shortbread cookies by hand you can use an electric stirrer, but you should not have problems.

Set the bowl with the dough aside and separate, sift the flour together with the baking powder. This step is very important because this is what will ensure that there are no lumps and we obtain a smooth and homogeneous dough.
Add the flour little by little in the preparation and stir until everything is completely integrated. The next step will be to wrap it in transparent paper and store it in the fridge for about half an hour. The ideal is to form a ball or several small ones.

After this time, you can take the dough out of the fridge. To work, spread a little flour on a flat surface and roll it out with the help of a rolling pin. Make the cookies of the thickness you want and cut them with the help of a pasta cutter in the shape you like the most or with a glass to make round butter cookies. Go preheating the oven to 180ºC.

Place the cookies on a parchment-lined cookie sheet and bake for 15 minutes, or until golden brown. Shortbread cookies are made very quickly, so you should keep an eye on the oven in case they require less time. If your oven has the option, heat up and down.

When they're done, take the tray out of the oven. You will notice that the cookies are a little soft, do not worry because it is normal. It is best to let them cool on a rack, you will see as soon as they cool they become crispy. Of course, be careful not to burn yourself, so always use a spatula to remove the fresh cookies from the tray.
