Ham and Egg Fried Rice【火腿蛋炒飯】
Today I will show you the dish I made most frequently at home. Because the ingredients are simple and it is easy to make, I always do fried rice with egg and ham when I feel lazy to cook. Sometimes I cooked a lot and froze the leftover if we could not finish it. It was still delicious for next meal after microwaved. This is my sleeper's unique skill!!
今天要介紹的是我在家最常做的,因為食材簡單而且又容易做,每當我偷懶時就煮火腿蛋炒飯,有時還炒一大鍋,吃不完冰起來,下一餐微波一下就可以吃了,味道還是一樣美味喔!這是我的懶人絕招!!
Ingredients:(about 4 servings)
2 garlic cloves
3 scallions
1 onion
1 carrot
4 pieces of ham(by your favorite)
3 eggs (beaten)
4 bowls of overnight rice(Overnight rice is chiller and drier, so it does not tend to stick together.)
所需材料:(約4人份)
蒜頭2瓣
青蔥3根
洋蔥1顆
紅蘿蔔1條(美國的比較細,請視紅蘿蔔大小酌量)
火腿4片(可依喜好加減)
蛋液(3顆蛋)
隔夜飯4碗(隔夜飯比較硬,炒起來會粒粒分明)
Seasoning:
chicken powder(can use sugar for substitute)
salt
white pepper
soy sauce
調味料:
鮮雞粉(可用糖代替)
鹽
胡椒粉
醬油
Directions:
製作方法:
Garlic minced. Scallions pearled, white and green separated. The onion, carrot and ham are all diced.
蒜頭切碎,青蔥切珠(蔥白蔥綠分開),洋蔥、紅蘿蔔、火腿皆切丁備用。
Heat the frying pan with oil over high heat. Add the scallion whites and stir-fry until fragrant. Add the onions and stir-fry until slightly transparent. Add the carrots and ham and stir-fry until cooked. Then add half of beaten eggs and stir-fry together.
熱一油鍋大火,先將蒜頭及青蔥的蔥白部分下鍋爆香,再下洋蔥炒至稍透明,然後下紅蘿蔔和火腿;炒到熟後再將一半的蛋液倒入一起拌炒。
Add the overnight rice over low heat. Season with salt, chicken powder and white pepper to taste. Add the rest of beaten eggs to coat evenly with the rice. Then mix with soy sauce to make it colored.
此時將隔夜飯倒入小火拌炒,加入鹽、雞粉、胡椒粉,再將剩下的蛋液倒入,讓飯粒沾滿蛋液;最後再加點醬油調色。
Before serving, add the rest of scallion greens and slightly stir-fry to increase fresh color.
起鍋前,將剩下一半的青蔥蔥綠倒入稍微拌炒一下增加色澤即可。
