Cook with Us #9 - "Pedro Mexican Pizza Slice" / Delicious Lunchtime Pizza Treat / Creative

This is my own take on the Mexican Theme ..I have called this makeover pizza.."Pedro Mexican Pizza Slice". Peter is my hubbie's name and Pedro is the name in Spanish. Pedro..was his idea!

Love making pizza, as it is relatively easy and all in one dish..ready to snack on! You can make it elaborate or as simple as you please.

That is the beauty of Pizza making.

What fun these contests are and I notice that they are becoming more popular, as we speak! A big thank you to @cookwithus and all the support team / @chefsteve , @pandamama and @offoodandart for affording us this fantastic opportunity!

This is just a made up recipe from ideas of Mexican food ingredients. So as to not make it too costly, I put crushed sweet chilli corn chips, as a layer on the topping. They also gave a nice crunch to it too!

The chilli addition came in the form of flakes, as you can see in my ingredient picture. Whole kernel corn was also added for nourishment, colour and crunch too.

Of course who could forget the avocado pear. Only one left on supermarket veggie section, that was ripe enough.

The small beef sausages were added, for some variation and substance.

I made the dough that I always make, but did not add egg into the mixture. Also made a little less base, so that it would not be too thick a crust.

Served the pizza slice with some lettuce, for a fresh look.

Ingredients - Topping for pizza

1 pkt beef sausages, fried and sliced
1 block of cheddar cheese
2 tomatoes, thinly sliced
1 avocado pear, chopped, as seen in photos.
1 large pkt sweet chilli pepper corn chips, lightly crushed.
flaked dry chillies to taste
Tomato paste for base of pizza.
I tin whole kernel sweetcorn
Salt and pepper to taste
2 dessertspoon's Naartjie juice to soak the avocado pear, after being chopped, to prevent going brown.

Pizza dough/ Ingredients

3/4 kilo pkt of cake flour
2 pkts dried quick rise yeast
250 ml warm milk to add the yeast to.
2 dessertspoon sugar
2 pinch salt

Method / Dough for base

Mix the yeast into the warm milk which the sugar has been added to
Lightly whisk a few times with fork and wait for the mixture to froth up.
Remember not to make milk too hot, so you kill the yeast!
Add this mixture to flour and knead till it is pliable and double the size.
Punch down and let rise once more.
Grease and flour your baking sheet and spread your dough on the base.
Prick with fork and then spread your tomato paste over it.
Added some fat that the sausage was fried in to this mixture and little sugar.
Bake for 20 minutes blind in preheated oven 200 degrees centigrade.

Remove from oven

Start layering your topping.
First spread corn
Next the tomatoes and sliced beef sausages
Then the crushed corn chips
The avocado and chilli flakes that were mixed together...remove excess juice.
Lastly the grated cheddar cheese all over the top.

Bake in oven 200 degrees centigrade for another plus minus 20 minutes or until topping has heated through and cheese bubbling.
You can also smell when the dough is cooked..your own home bakery!

Take out of oven and slice..serve with any salad you wish!

Serves about six adults.
