COCONUT & CHOCOLATE CAKE - WOW - VIDEO
This amazing chocolate coconut cake is about to blow your mind. A hint of coconut takes this moist chocolate cake to a whole new level. Everyone needs a good old-fashioned chocolate cake in their repertoire that is easy enough to whip up on a whim. Made with a simple ingredients this delicious cake is a real crowd-pleaser. it looks fantastic on a plate and the tastes incredible. I am using 22 cm baking dish.
Ingredients :
Coconut Cheese Balls :
250 gr OR 1 1/8 cup of dry cottage cheese or farmers cheese ( can also use ricotta cheese)
2 egg yolks
60 gr OR 1/4 cup of sugar
60 gr of sweetened coconut shreds
Chocolate Cake :
4 egg yolks
6 egg whites
60 gr OR 1/4 cup of sugar + 2tbsp ( for egg whites)
20 gr OR 1/8 cup of flour
20 gr OR 1/8 cup of cornstarch
20 gr of 1/4 cup of cocoa
60 gr OR 1/3 cup of melted dark chocolate
1 tsp of baking soda
1 tsp vanilla extract
Chocolate ganache :
60 gr OR 1/3 cup
20 gr ( 4-6 tbsp) of heavy or double cream
10 gr ( 1-2 tbsp) of butter
Directions
Step 1 : In a bowl add your cottage cheese, sugar, coconut shreds and egg yolks and mix it all well.
Step 2 : Take about 1 tbsp of the cheese mixture and roll out as many as you can and place into your baking dish lined with some parchment paper on the bottom.
Step 3 : In a different bowl add your egg yolks and sugar and whisk on high speed until mixture become white and pale. This might take about 5 min. Then add your melted chocolate and mix again.
Step 4 : In a separate bowl add all your egg whites ( you should have 6 ) and whisk on high speed until it starts to form soft peaks. Add about 2 tbsp of sugar and keep whisking until you have a white peaks.
Step 5 : To make the cake, you will first add half of your dry ingredients, then whipped egg whites, mix it through, then add more dry ingredients followed by more egg whites.
Step 6 : Add cocoa powder and mix everything through, don't mix too much, you don't want to knock all the air out.
Step 7 : Pour your chocolate mixture all over the coconut cheese balls and bake in preheated oven at 175 C / 347 F for 30-35 min.
Step 8 : Leave the cake to cool down completely and make chocolate ganache. Cover the cake and leave to set. Decorate with fresh fruit or any way you like it.
