Hello my Dearest Foodies,
Last week I discovered these MINI SWEET POTATOES in our supermarket. I don't know if you ever stumble up on them, but it was first time for me. They taste exactly like regular size sweet potatoes, but I like them being so small, not only because they are cute, but they are also easier to eat.
Nevertheless, you can make this recipe with regular sweet potatoes, it will be just fine. Simple, yet delicious and healthy. Make sure you have a nice big salad too ๐๐๐

Roasted Mini Sweet Potatoes Loaded with Green Peas and Topped with Cashew Sour Cream
Vegan โ Gluten Free

INGREDIENTS for 2
โข Mini sweet potatoes 6 to 8 (depending on the size)
โข Frozen green peas 1 ยฝ cup
โข Garlic power to taste
โข Black pepper to taste
โข Himalayan pink salt to taste
โข Grapeseed oil 2 tsp (or oil of your choice, optional)
โข Chives to garnish.
PROCESS
โข Preheat the oven to 425F.
โข Wash the potatoes and make incision along side of each one of them.
โข Place them on baking sheet liked with parchment paper and bake for 40min.
โข In the meantime, place the peas into small pot with ยผ cup of water on low heat.
โข Add salt and cook covered with lid for about 7min.
โข When ready, take the potatoes out of the oven and make the opening slightly bigger with two forks, pulling each side into opposite direction.
โข If you like, you can brush lightly with oil, add salt, pepper and fill with peas.
โข Top with sour cream, garnish with chives and serve.
CASHEW SOUR CREAM RECIPE
โข Cashews 1 cup (soaked for six hours and rinsed)
โข Juice from 1 lemon
โข Garlic powder 1 tsp
โข Nutritional yeast 1 tbs
โข Water ยผ cup
โข Himalayan pink salt to taste
Blend all in a blender until smooth.

I think I saw two peas leaning a little bit in the first image, Lena, and the last one has one pea thatโs a little less green than the others.

Looks delicious Lena! I didn't use to be a pea fan, but now I love them. Especially with sweet potatoes and that luscious cream. They're little so I could go for one or maybe even two. ;)
Oh Katie they are really small, you could eat tree or four. The one in the middle was little bit bigger than the rest of them, but other wise they were two bites size, lol. Thank you so much for stopping by, I am glad you like it ๐

Howdy Miss Lena! oh my gosh I've never heard of these things either, mini sweet potatoes..I'll have to look next time. The full sized ones can be a hassle because of their size, that's for sure. And I have to try to make that cashew sour cream, that looks wonderful. This is a gorgeous post!
Howdy Janton! They are selling them in small bags in our supermarket, so make sure you check that too. I honestly preferred them over the big ones, but I like to make oven baked fries from the big ones. It goes well with that cashew sour cream as well and some spicy sauce if you like.
