Honey "is a remedy for human beings". This fact was confirmed by the scientists gathered during the World Beekeeping Conference held in China between September 20 and 26, 1993. There they discussed the treatments with honey derivatives.

Honey is a food made by bees from the nectar of flowers, secretions that extract from living parts of plants or that are on them, and that are in charge of pecorear and transform, mixing it with specific substances, to later store it and let it mature in the combs of the hive.

The different types of honey can be classified according to different criteria, according to the way of obtaining it, the purpose of employment, the time of production, or its origin. The most common is to find on the market honeys classified by the time of production or by its origin. So that:

-The spring honey is produced until the end of May
-Main or seasonal honey between June and July.
-The late honey is produced between August and September.

In chemical analysis, in each 100g, pollen presents on average the following elements:

  • Free amino acids: from 10.0 to 13.0%.
  • Proteins: from 15.0 to 30.0% ..
  • Lipids: from 1.0 to 5.0%.
  • Carbohydrates: from 20.0 to 40.0%.
  • Sugars network: from 24.0 to 26.0%.
  • Sugars not network: from 2.0 to 4.0%.
  • Fibers: from 3.0 to 5.0%.
  • pH: from 4.7 to 5.2%.
  • Mineral salts: 2.5 to 3.5%.

Vitamins:

Thiamin, Riboflavin, Nicotinamide, Pantothenic Acid, Pyridoxine, Meso-inositol, Biotin, Folic Acid, Cyanocobalin, Ascorbic Acid, Vitamin D, Tocopherol, Carotin.

The Amino Acids present are:

Aspartic Acid, Glutamic Acid, Alanine, Arginine, Cystine, Glycine, Histidine, Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Proline, Serine, Threonine, Tryptophan, Tyrosine and Valine.

Mineral salts:

Calcium, Chlorine, Magnesium, Phosphorus, Silicon, Sulfur, Iron and Potassium.
