Auntie Level: Master {Fueling for the Good Life--FFF}

Happy Friday friends! As @puravidaville and many of my other pals know, Fridays mean niece time! I missed my little blonde one last week, so I had to make up for it today. Luckily there's still some daylight left to also crank out a @foodfightfriday post, as well. Gotta eat the good stuff if you want to stay on top of your Auntie game!

Today was a solid visit. We made matching bracelets and one for mommy, too. Though don't tell her mine broke as soon as I got in the car. Are you even an aunt if you don't have beads underneath your car seat that you'll never be able to reach? We also hid Easter eggs--the plastic ones of course. Forget Christmas in July, we dig Easter in our family. She's also getting better at coloring in Uncle Dave's (@dksart) rad custom coloring book that he made for her birthday.

To top it all off, I almost walked into the grocery store covered in stickers. #winning

As you can see, I get pretty hungry after all this activity, so I'm throwing down another one of those triple threat bowls of goodness posts. I'm sure @dandays will dig one of these, though he's already been slapped with the tofu goodness in the comment thread of one of his posts. Might not be his cup of tea, but I think @lenasveganliving or @thekitchenfairy would be totally down for my sweet and sour deliciousness.

I used a sauce from one of my cookbooks (Vegan Richa's Everyday Kitchen) to add rocking flavor to some of my farmers market goodies with firm tofu. Eggplant, onions and yellow zucchini from the market cooked up on the stove top and finished off with a wild rice mixture. As we have also had a solid crop of cucumbers from our own garden, I also did a little spicy salad slightly reminiscent of kimchi with cukes and Napa cabbage. I believe the greens forming the bed of this yummy bowl were mizuno, from my favorite hydroponic dudes.

A little sweet, a little spicy, and just enough tang to make my mouth happy. Plus all the nutrients this active Auntie needs to stay on top of her game.

Bowl number two coming atcha with not only farmers market goodness, but also some of our peach-picking haul. @dksart is never one to turn down any kind of salsa, so I whipped up homemade peach salsa with roasted poblano peppers, heirloom tomatoes, onion and lime juice. That topped off a satisfying mixture of local sweet corn from some of my favorite farmers, black beans, and my favorite ancient grain--farro. Some more greens, sprouts, and creamy avocado made this dish a fresh summer delight!

I'll round out my entry with one of my favorite veggie burgers that I created in my own kitchen last summer. The pinkeye peas are popping up again at the market, so I threw together my veggie burger recipe using those seasonal gems. I was also inspired to use up a head of cabbage by a post from @abitcoinskeptic, so I cooked mine up with an onion, apple, apple cider vinegar, Dijon mustard and caraway seeds. Yep, more greens, nutritious sprouts and mouthwateringly (is that a word?) delicious heirloom tomatoes. I also had more of that awesome fresh corn to serve up on the side because it's only available for so long. This time around I give @dksart an assist as my favorite sous chef as he grilled the burgers and corn.

Well, it's just about dinner time again, so I'm calling it quits for the day! I could probably have shared a fourth bowl to catch up with my fellow foodies, but I'll save that for another day. I don't want to spoil you with too much plant-based goodness in one post...

Coolest plant aunt ever! I really dig it when you make a Friday appearance, your posts read real similar to things I’d say.

I’m not opposed to tasting your tofu, though, but if I like it, fact: it would be a first! No way I’d turn down anything you whip up though—not even tofu. @dksart made you a cookbook and the little one a coloring book?! Man, that’s frikkin awesome.

The Friday crew is so chill that I think I tend to totally chill out in my writing, as well. Not that I try to be all proper and formal otherwise, but it is nice to just let loose and let it rip without worrying about pleasing anyone or having to drop nutrition knowledge. I'm glad the vibe I have in my own head comes across well. ;)

Yep, @dksart killed it on the gift front the last year or so. He's even made more food videos than I have yet, haha. Just the other day he filmed himself making quick pickles from the cukes in the garden because I was too busy to do it myself. What can I say, he's a keeper.

Man, I'm overflowing with the niece love right now. I saw my other little nugget (daughter of a really close friend) multiple times the previous week to get my fill, then I got to follow it up with this jam-packed fun fest. I'm a lucky gal.

That little stinker says "ewww" to just about everything I bring over. She even gave me the side eye yesterday when I shared my delicious apple with her. I think she thought I was trying to punk her into eating some vegetables. Hopefully someday she'll get out of that picky toddler stage and come join me in my kitchen endeavors. ;)

Just be glad you don't have to deal with the constant flip-flopping: I hate that! I love those! Those are gross! Yum these are so good! I am telling you.. My 2 kids know how to get me goin' LOL I ain't no special order chef. hahaha

@plantstoplanks - great job with your aunt-ing! I used to love when my brother's twins (1 boy 1 girl) used to come to spend the night when they were little. And now that they are 22 years old - they still like to hang out with us.

Aww, I can't wait for the sleepovers! That's so awesome that you are still close with them. I hope for the same thing as she grows up!

Wow that food looks perfect and delicious Auntie food - Shame your bracelet broke they were looking so good. Glad you girls had a mega day together... playing with children is one of the best ways to exhaust yourself ❤️🦋🌈🥰

It can definitely be exhausting, but so worth it to spend time with the little ones! I have made so many memories on our Friday afternoons together. The bracelet may have broken, but the memories are still there. :)
