Spray it with water before going in the oven? I would love a crispier flakier crust but my boys like it soft...so I defer to their tastes. Thank you for spilling your knowledge on this though. When I make it for guests I’ll give the egg wash a whirl.

Yep just a nice light mist, or you could also put a small amount of water or ice in an oven safe bowl/pan in there with it. (It's the steam that makes the crisp.)
