Citrus Broccoli

Why all the food posts lately?

Well, at least in the circles I tend cross paths with, there is this narrative. A false one, that eating good, healthy food is complicated, out of reach, and only for the affluent.

There may be some truth to this in extremely impoverished, and war torn parts of the world where wealth and resources are not as accessible to all.

In the US this is an absolute garbage excuse that I hear way too oftenl!

~So we are going to fire yet another flaming arrow at this narrative with a newly discovered for me anyway, recipe that's cost is relatively low and takes just a few minutes to prepare. It's also plant based and full of good stuff.

●Prep time about 5 min

●Cooking time 10 min or less.

Ingredients.

• High temperature oil of your choice I used avacado on this one

•1/2 Cup pine nuts

•1/2 Cup raw pumpkin seeds

•1 Medium red onion

•1 Bunch fresh broccoli

•Black pepper

• Juice of 2 limes

•sea salt

Now let's fire up that stove top!

-Dial up the heat to medium high and pour a liberal amount of oil in a pan, get it crackling then add the onion, pine nuts, and seeds.

-You'll want to work these for just a minute or two to get them. slightly browned.

-Once you've accomplished this it's time to add the broccoli. Sprinkle with a bit of sea salt and black pepper if you like. You will want to treat this like a stir fry constantly working the broccoli to get it just barely seared on the ouside but still fairly firm with a bright green color. I did this just for about five minutes. image

  • Dial down the heat to medium and, add in the lime juice with a bit of water for a steaming effect and place a cover on the pan for about 3-5 more minutes. Occasionally stirring to infuse the citrus taste into the other ingredients.

-Remove frome heat, let cool for a few minutes and enjoy the awesome. That is if you can beat back the attackers who would try and pillage your plate.
