Eggplant baked with tomato and cheese

Ingredients:

eggplant - 2 pcs
tomatoes - 4 pcs
hard cheese - 200 g
Garlic - 3-4 cloves
lemon juice - to taste
sugar - to taste
dill, parsley, cilantro - to taste
salt - to taste
vegetable oil

Preparation:

  1. Eggplant wash and cut lengthwise into plates about 5 mm thick, is not noticeable until the end dorezaya 1.5 cm to eggplant turned 2 "fan". Each plate rub with salt and pepper.
  2. Part of hard cheese cut into slices, and 2 tomatoes wash, dry and cut into slices. Between the strips of eggplant put 2-3 tomato slices and 2 slices of cheese.
  3. Put stuffed eggplant in a baking dish.
  4. The remaining tomato pour over boiling water and peel. Then cut into small cubes and put in a pan with vegetable oil. Add crushed with the help of spadefoot garlic, sugar, salt and lemon juice. Stir and cook until the sauce.
  5. Prepared eggplant pour the sauce to put in the oven. Bake at 180 degrees for about 20-25 minutes.
  6. After that, sprinkle with grated cheese. Return to oven and bake another 5 minutes. Transfer to a platter and garnish with greens.
