Home made Masala Dosa.. Mashallah.....

Thanking the Almighty for blessing us with the knowledge of cooking and for the food we eat...

To avoid long post I will update the chutney recipe under the pictures in a while.... 😊♥
For Dosa.
2 cups Raw rice / Dosa rice
1 tbsp toor Daal .
1 tbsp chana daal .
2-4 tbsps Urad daal.
1 tbsp moong daal .
1 tbsp masoor daal.
3 handful of cooked white rice ..
Salt as per taste .
Soda powder.
Ghee.
Method.
Wash and Soak rice and daal , for minimum 5-6 hours ...
Grind rice and daal along with cooked rice into a smooth paste.. adding water as required... use the same soaked water...
Do not dilute to very runny consistency...
Just make it thick dosa consistency....
Add salt , add soda powder using the tip of ur kitchen knife... just a little more than a pinch should be the quantity...
Mix everything well with ur hands... and cover , let it ferment overnight... in a warm place...
If you are at a cold place, make sure u keep the container at a warm place... it is necessary to ferment and the dough should rise...
In winters I preheat the oven and keep the batter inside the oven...
Make sure u keeo in a bigger vessel than the batter level , when it rises if you use a smaller vessel the batter may drip...
You will know ur batter has risen and fermented well , when there will be lot of air bubbles, and it will turn thick....
To use , mix th batter, heat a tawa, add a spoonful of batter in the centre and spread it really thin using the spoon....
Leave it for a minute... drizzle ghee on top and let it get crisp in slow flame...
When its getting brown and crisp add bhaji and remove on to a plate... serve hot....
