My favourite - shredded chicken

I really don't like to cook, but for some reason I'm good at it. So from time to time someone will talk me into making something and on top of the request list is this shredded chicken. It takes about an hour and a half to make, but it is worth it.
This tastes just as good the day after so I always make enough to last a few days.

Ingredients:

1 kg chicken fillets
A little oil for frying
1 ts sliced ginger
7 cloves finely chopped garlic
5 ea star anise
1⁄2 ts whole green pepper
1 ts allspice
1 dl sweet soyasauce
1⁄2 dl rice vinegar 
2 dl water

Mix all the spices, garlic and ginger and fry it in a tall pan for a couple of minutes. Add the soya sauce, rice vinegar and water and bring to boil before adding the chicken. Leave to simmer for about 1 hour. Then pull the pot off the heat, take the chicken out. Strain the sauce before poring it back into the pan. Shred the chicken before adding that to the pan as well and leave to simmer until all the sauce has gone into the meat.

To make the flavours really stand out you need to serve this with pomegranate. I also add cucumber, corn and green salad and mix it together in a tortilla wrap .
