Fantastic Blueberry Banana MUFFOWNIE !!!
MUFFOWNIE...?!?!....
What are those, you asked???
It's a made up word, to closely describe a combination of delicious brownies in the form of muffins. These can be decorated with a frosting to make them even more tasty and more rich (read more calories...;) )
They are very popular at B-day parties or any get together, considering you'll actually have the time to bake them and to decorate...
Many times, friends tell me, they rather go to the store and buy ready to eat cupcakes, than to bake.
The cleaning after the baking process is not something they like to do....
However, once you taste these, it's hard to go back to the store bought "bla" tasting... stuff...!
a CHERRY on top would be perfect here....
but not everybody like cherries and I didn't have any on hand, to be honest...
INGREDIENTS:
150g of unsalted butter
1 1/4 cups of sugar
3/4 cup of natural unsweetened cocoa powder
2 large eggs
1/2 teaspoon fine-grain sea salt
1/4 teaspoon baking powder
1 teaspoon vanilla extract
2/3 cup of gluten free baking flour (or any other flour of your choice)
2 medium bananas
2 cup of blueberries (fresh or frozen)
Once you gather up all the necessary ingredients, it's time to bake some goodies!!
Below are photo instruction in addition to the written directions
First set your oven to 325 degrees Fahrenheit
Next:
Brown the butter in a saucepan over medium heat until pale golden brown (about 10 min), whisking constantly.
Remove pan from heat and add sugar
Add the cocoa powder, sea salt, baking powder, stir until the ingredients are thoroughly incorporated.
Let it cool for 5 min.
The mixture should be slightly warm (if not, let it cool few more minutes) and add the eggs one at a time,
mixing vigorously after each one.
Next, add the mushed bananas, stir until the ingredients are thoroughly incorporated
Add the vanilla extract and flour
Stir until the mixture is well blended.
Now is the time to add the blueberries.
Fold them in.
Be gentle and don't mush them up
Spread the batter into lined muffins' pan
Bake in the pre-heat oven, on the lower rack, for about 18-20 min (varies by oven)
or until a toothpick inserted in the centre comes out almost clean.
