INGREDIENTS:

150g of unsalted butter
1 1/4 cups of pure cane sugar
3/4 cup of natural unsweetened cocoa powder
1/2 teaspoon fine-grain sea salt
1/4 teaspoon baking powder
2 large eggs
2 medium bananas (3 small)
1 teaspoon vanilla extract
2/3 cup of gluten free baking flour (or any other flour of your choice)

Preheat oven to 325 degrees Fahrenheit

Direction:

  • Brown the butter in a saucepan over medium heat until pale golden brown (about 10 min), whisking constantly.
  • Remove pan from heat and add sugar
  • Add the cocoa powder, sea salt, baking powder, stir until the ingredients are thoroughly incorporated.
  • Let it cool for 5 min.
  • The mixture should be slightly warm (if not, let it cool few more minutes) and add the eggs one at a time,
    mixing vigorously after each one.
  • Next, add the mushed bananas, stir until the ingredients are thoroughly incorporated
  • Add the vanilla extract and flour
  • Stir until the mixture is well blended.
  • Spread the batter into lined pan
  • Bake in the pre-heat oven, on the lower rack, for about 23 min or until a toothpick inserted in the centre comes out almost clean.

After it cools, cut into small squares and serve them with fresh bananas, ice cream works as well ;)
Or by itself....after all I think that's how we enjoy it best!
