Escarole/Endive with Beans
In my previous post Gardening for Health I mentioned a dish that is quite common to me and my family. This dish is many things but the most important it is HEALTHY. Following is my recipe. Please note: I'm from the old school I do not measure or weigh the ingredients (except when baking) so make this dish according to your and your family taste.
Ingredients:
- escarole or endive
-cooked beans or chick peas or a mix of beans (your preference)
-a couple of cloves of garlic
-olive oil
-salt
- chop escarole in about 1 inch length and then boil until cooked, then drain
- line a pan with very thin line ofolive oil
- add garlic to oiled pan and saute till golden
- add escarole, beans and salt to taste
cook for about 15 minutes. giving it time for the flavors to merry
In the attached picture you will see the dish which has mixed beans and also on the side there is toasted whole wheat bread made with ancient grains (Einkorn), topped with a Russian yellow tomato, bocconcini and basil dressed with a bit of olive oil..............who can ask for more?
