Something New- Simple Tres Leches Cake Recipe

Summer doesn't start for another few weeks but, for the last few days, the temperature outside has been saying otherwise. For me it's also a diet changing time. In addition to more time outside, there's more Barbecue and more grilling which means I'm going to need a cold dessert to cool down with afterward. This is the EASIEST Tres Leches Cake Recipe that I know how to make. It's a classic delicious Latino dessert and also my usual go-to crowd pleaser when going to get-togethers for the summer. Enjoy!

What you'll need:

  • 9x13 baking dish
  • Betty Crocker Super Moist Vanilla Cake mix
  • 3 eggs
  • 1/2 Cup oil
  • 1 Cup milk
  • 1 Tsp vanilla
  • 1 oz can evaporated milk
  • 1 oz can sweetened condensed milk
  • 1 pint heavy whipping cream
  • 1/2 Cup sugar
  • 1 Tablespoon Spiced Rum (optional)

Instructions:

  1. Bake the boxed cake mix as directed on the box. The only change is that you should use milk instead of water.

  2. Once the cake has cooled to room temperature, make holes in the cake with a fork or spoon. Don't worry about being too neat, the holes will get covered up later. :)

  3. In a separate bowl mix the evaporated milk, the condensed milk, and 1 tsp of vanilla. After it's thoroughly mixed, pour it over the cake, cover and refrigerate until the cake is cold.

  4. Whip 1 pint heavy whipping cream, optional Rum, and 1//2 Cup sugar until the cream forms stiff peaks. Frost the cake with it and chill in the refrigerator until served!

This dessert is great with fresh summer berries plain or macerated in a little balsamic vinegar or wine. You can also switch it up in the fall by using Spiced cake mix with a sprinkle of candied ginger for a fall twist!
