Iron Rich Salad!

I had no idea molasses and pumpkin seeds were so full of iron, a whopping 20% per tablespoon for molasses, and 15% per 30 grams (or 1/4 cup) for the seeds. This salad is simple, and helps me ward off unwanted iron supplements during pregnancy.

This salad is missing tomatoes simply because I'm all out, but is still quite tasty thanks to the orange-molasses dressing that the steak bits also marinated in. The dressing consists only of orange juice, molasses, olive oil, garlic, and apple cider vinegar.

My usual favorite salad is a southwestern with the beans and corn and all that, but THIS salad really makes me feel great afterwards. After eating it, I can definitely tell that my iron level was questionable.

For those curious, I am halfway through my fourth pregnancy, and at the 20 week mark. My midwife has recommended I get an ultrasound to ensure all the important organs are there, but I am not thrilled about the idea this time around. The dangers of the procedure are downplayed, the benefits are superficial, and I kind of like the idea of keeping it a surprise.
