Simple, and Delicious Vegan Biscuits
Hey! Bunlogic here and thanks for stopping by! This is our second post on the platform, and we have been loving the community, and the posts we have been seeing. We wanted to drop some food knowledge on anyone who would be interested in making basic, from scratch, vegan biscuits. These biscuits can be enjoyed in numerous ways – Jam, vegan butter in the morning, or with gravy for dinner :D
Ingredients:
1 Cup of Almond milk (or any non-dairy milk)
1 teaspoon of lemon juice (or apple cider / apple juice)
1 ½ cup Whole Wheat Pastry Flour
1 Cup all-purpose flour
1 Tablespoon Baking Powder
2 teaspoons of sugar
½ teaspoon salt
¼ cup refined coconut oil
Couple of notes on the ingredients.
-If you don’t have Whole Wheat pastry flour you can substitute for any other Wheat flour, or all purpose - this will just determine the texture of your biscuit.
-The oil must be solid! If it’s not solid let it chill. this is essential to creating the crumb effect
Lets get mixing!
- Preheat your oven to 425F
- Add the lemon juice to your almond milk, and allow to sit on the sidelines for now.
- Sift the flours together, and add your sugar, baking powder, and salt. Hand mix to get your hands messy
4... Take about ¼ of the coconut oil and throw it in the middle of your flour mixture. You want to break up the oil to pea size bits. Repeat till you run out of your oil
5... Make a well in the middle of the bowl, and add your milk(if you see/feel chunks when pouring the milk don’t panic! This is normal)
6... Mix the dough till it is formed, don’t over mix, and if the dough feels dry feel free to add a little more milk.
7... Rip the biscuits to get about 8 dough balls.
8... Get creative! Either leave the dough as is or form the dough to be disks, squares, triangles… just try not to over mix or this will affect your crust/texture.
9... Before throwing the dough into the oven you can “egg wash” your biscuits. Typically I would use aquafaba, but I only had oil to use today :(
10... Bake for 15-20 minutes- the longer you bake your biscuits the more crumbly they will be : )
