Once you pop you wont stop!
Poppers! Yes. These babies will rock you. Fresh jalapenos filled with my special mix of cream cheese, grated cheddar, shaved parmesan, some roasted confit garlic and crispy fried bacon roughly chopped up. Mixed this in a bowl with some salt and pepper and you have your self a sticky, tangy mix of goodness.
Cut 2 poppers in half and de-seed as much heat as you can handle. Holding the open jalapeno fill, ideally using a spoon and press the mix into the jalapeno. Now make and egg wash with 2 eggs and a dash of water, some plain flour into a bowl and another with bread crumbs.
Dip the poppers into the flour, then egg and finally into the crumbs. Some people like to double crumb them but i prefer not to.
Now using a deep pot fill half way with vegetable oil and heat up. Test your with a carrot stick or other veg just to make sure its sizzling. Now fry your poppers in the oil and then remove once golden brown. Place onto paper towel to drain off excess oil.
Season again lightly and finish with your favorite dipping sauce. Mine for this is a lemon sour cream! Yum
