Nasi Goreng
Here is a photo and recipe for my Nasi Goreng. Hope you enjoy trialling the recipe if you get a chance! :)
INGREDIENTS
• 2 cups Jasmine Rice
• 8 tablespoons Nasi Goreng Paste
• 2 tablespoons Soy Sauce
• 3 eggs whisked
• 2 spring onions, thinly sliced
• 2 tablespoons garlic mince
• 2 tablespoons ginger
• 4-5 chicken thighs chopped
• 2 cups of chopped coriander
• 1 packet of chives
• 1 packet of bean sprouts
• 1 bottle Asian cuisine cooking oil to cook with
METHOD
Step 1
Cook rice following absorption method on packet or until just tender then drain then set aside.
Step 2
In a bowl whisk 3 eggs then add 2 tablespoons of soy sauce and set aside.
Step 3
Heat a wok over high heat until hot. Add 2 teaspoon oil and swirl to coat. Firstly, add in the spring onions followed by the garlic and then the ginger and stir well. Next add in the chopped chicken thighs and cook until golden/brown. Add in another 2 tablespoons of the cooking oil. When chicken has become golden/brown add in the whole packet of bean sprouts and keep mixing them around until they shrink in size. Next add in 1 cup of chopped coriander and half packet of chives and mix well. Add in egg mixture and continue to stir as you would when making scrambled eggs. Now add in 4 tablespoons of the Nasi Goreng paste and mix well.
Step 4
Now that the ingredients have been mixed well it is time to add in the cooked rice into the wok. Add in a cup at a time and mix through the rice with the ingredients so they combine. Once all the rice and ingredients have been mixed add in another 4 tablespoons of the nasi goreng paste and mix well. Now add in the remainder half packet of chives and 1 cup of coriander and give that a stir through for 1min. At this stage when adding in the chives and coriander you can turn off the gas and stir through the ingredients.
Step 5
Spoon nasi goreng onto serving plates.
