The Homemade Shrimp Burrito n' Tortilla

Burritos anyone? And who else loves shrimp for breakfast? I know it's weird but shrimp in a burrito oh just tastes so good. I'm having one now as I type these words- a burrito while making your post is like a match made in kitchen, I mean heaven. :-)

If you'll notice everything I do here is from scratch since I love making my own. Homemade tortillas are way better than store bought. This one I'm making is the perfect one for you! Make sure to follow the right measurement and you'll come up with this better than store bought tortilla you'll ever gonna have in your life.

So yes I've been away for almost 3 weeks already. My mom got admitted at the hospital for a week and I needed to take care of her the reason why I was absent for many days here. It's been a struggle but the Lord is good and the her Doctor is really taking care of her medical needs so well.

We've been staying in the city due to Mom's condition but now we're back in the island. And oh it's hard to put in words to describe how much I so missed my photography and making my food videos just for you guys here on Steemit. It's like my world revolve around. I so love photography and will continue pursuing it until the end of time. (very sentimental and true)

There's so much I want to share to you guys but it seems like I don't have the words to say it but all in all I'm very happy knowing that my Mom is here and she's well. I came to realise the value of the person during their absence and it's when you appreciate their total being and how much they have influenced your life.

As a nurse, I had flashbacks during the times when I was working at the hospital and it's sad to see people being sick and family being sad. I myself would pretend to be okay and strong in the middle of a very heart wreaking moments of the patient's life specially when they are on the verge between life and death and seeing the families crying in front and the patient lying down as if it's his last breath of life. I agree it is just so hurting to witness this kind of scene and situation. I'm thankful I didn't end up like this during my Mom's time.

I remember I could hardly sleep every night coz I cannot tolerate closing my eyes while she's breathing heavily. There were sleepless nights I needed to endure. Me, Mom and brother, we kind of established a more closer family ties moments where we saw Mom's most vulnerable times and were able to witness these happenings and remembering it just makes my heart cry.

Also in times like these and sometimes it takes sadness to know what happiness is. Happiness when I learned how my brother is in times of care and need. I saw a different side of him and seeing him taking care of mom is so relieving. Even the strongest person is challenged in these times of pain and struggle. It's as if the green leaves turn to yellow as the sun is shimmering its bed. I saw hope and love.

And for that, I would like to share this recipe that my brother loves. We both like the smell and taste of cumin. Even though it reminds me of the smell of the cave man but its taste reminds me of the thousands of its yellowish bountiful harvest and its flavour devours all misery in the planting season. Sorry I'm lost with my words and I hope this communication barrier will end soon. Lol.

I bet it's the taste and smell of cumin is star of the burrito show. Also the combination of cheddar cheese and mayonnaise complements it and brings it perfection.

INGREDIENTS

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 3/4 cup water
  • 12 pcs shrimp
  • 20 g unsalted butter
  • 2 tbsp olive oil
  • 1/2 cup mayonnaise
  • 1 cup buttered rice
  • 1 cup cumin flavored black & kidney beans
  • 1 cup spiralled cucumber
  • cumin and chili powder for seasoning

DIRECTIONS

In a mixing bowl, sift flour using a strainer. Add salt, olive oil and water. Stir until well combined. Knead dough for 5 minutes, form a ball and divide to 4 equal sizes. Roll each dough using a rolling pin. Using a round platter as a guide, cut dough to make a perfect round tortillas. In a medium heat, add tortillas and cook each side for 30 seconds or until you see some brown spots and blebs. Prepare shrimp and add salt to taste and coat each with cornstarch. In the same pan, add butter and olive oil and cook shrimp. Start making your burrito. on a flat surface, line with baking paper rectangular size, lay tortilla then add mayonnaise, rice, beans, cucumber, cheddar cheese, cumin and chilli powder and shrimp. Fold and wrap together with baking paper and serve.
