Keto Chicken & Cucumber Pancake
My husband and I started our keto journey in October 2017 and still in this journey as we enjoy losing weight and getting the benefits entailed when you are on ketosis.
I will post keto recipes which i think its easy and simple. The first recipe I would like to share is Keto Chicken & Cucumber Pancake.
Ingredients:
- 100g chicken breast (minced)
- One Japanese Cucumber (deseeds and grated)
- 4 Eggs
- Salt & Pepper
- Coconut Cooking Oil (for frying)
Instructions:
Grate Japanese cucumber (with skin) using a grater. Mix with salt and let it sit for a while. Then by using a cheese cloth or a strainer, squeeze out excess water from the grated cucumber.
Mix grated cucumber with minced chicken, eggs, salt and pepper.
Warm your non-stick pan with medium fire and put in coconut cooking oil (a dash or two).
Take a soup ladle and scoop the egg mixture and put on the pan.
Flip once cooked.
Best eaten with Kewpie Mayo or Mustard Sauce.
