Chili with Fried Cassava and Cheddar Cheese
Ingredients
For the chili
- 1 pound of ground beef
- 1 big green pepper
- 1 big red pepper
- 2 cups of premade beans
- salt
- cheddar cheese
For the cassava
- 2 pounds of cassava
- 6 leaves of culantro (or 1/2 cup of coriander)
- 1/2 cup of chives
- butter
- salt
Instructions
For the chili
- Mix the ground beef, the chopped green and red peppers, and salt. Cook them in a boiling pot for around 20 minutes.
- Add the premade beans. Probably they are cold if you had them in the fridge, you should heat them around 10 minutes then.
For the cassava
- Peel the cassava a boil it with salt until tender. It should take around 20 minutes. When tender turn off the stove.
- Preheat a pan and add the butter. Try not to heat it too much as butter can burn rather quickly.
- Add the cassava, the chopped culantro and chives.
- Stir fry until a you see a light brown color in the cassava.
Serving
The cassava and the chili should be ready around the same time. When they are ready serve them in a dish and grate cheddar cheese over them.
