WALNUT BREAD - with chia seeds, quinoa and oatmeal
A bread that is full of proteins, vitamins and minerals. I have used walnuts today, but any kind of nuts will do. Quinoa comes in different colors. Here I have used a mix of white and black. But you can use any color. I just use what I have available.

Takes about 25 min.+ 60 min. for the dough to raise + 40 min. baking
Ingredients:
- 100 g. quinoa
- 2 tablespoons of chia seeds
- 3 dl. milk
- 25 g. yeast (dry)
- 3 eggs
- 40 g. brown suggar
- 2 tablespoons of dark syrup /honey
- 300 g. flour (wheat)
- 100 g. oatmeal
- 150 g. walnuts chopped into smaller pieces
- 1 teaspoon salt
egg, sugar and honey ready to mix with the dry ingrediences
Instructions:
This must be prepared before you start:
- cook quinoa – best if you do the day before
- leave chia seeds in the milk for at least 20 min to swallow
Then you start:
- warm the milk – 37 celsius degrees
- whip egg, sugar syrup / honey in the milk
- add half of oatmeal and the flour litle by litle until smooth
- add quinoa, walnuts, salt + the rest of the flour
ready to leave to raise
Put the dough in a baking form and leave to raise for 45- 60 minutes. My baking form measures inside 18 x 20 cm. Varm oven up to 180 degrees and bake the bread for 30 – 40 minutes, depending of your owen. Leave to coole.

ready for a cup of tea
Taste very nice with jam, sliced bananas or cheese. Enjoy! :)
