Black on white: we cook dumplings with "Coal"

What we need:
- For the test: 1 egg, 250 ml of water, 500 g of flour, 10 g of cuttlefish ink, salt, sugar - a teaspoonful;
- Filling: shrimps, leeks, ginger, rice vinegar, sesame oil - a teaspoonful;
- For sauce: curd cheese, cream 33% fat;
- For decoration: red caviar, balsamic sauce.
We knead the dough from all the ingredients, leave it for a short time. Mix again, sprinkle with flour, so as not to stick to the table or board, roll it out quite thin (2-3 mm thick).
A glass or a special cylinder cut out of the dough smooth mugs.
For the filling finely chop the shrimp, leek, a little ginger, add a little rice vinegar and sesame oil, mix, a few minutes give the filling soak sauces.
In each circle of the test, put a teaspoon of filling and we form pelmeni, as shown in the photo.
We lower the pelmeni into boiling salted water, cook for about 5 minutes.
At this time, prepare the sauce. In a small saucepan with a thick bottom, melt the cheese cheese on low heat, add about 100 ml of creamy cream, slightly add salt ,. We bring it to ready for about 2 minutes, constantly stirring with whisk - the sauce should be homogeneous, creamy.
Take a deep plate, spread the sauce.
On top - dumplings (without the broth in which they were brewed), and as a pathos final chord decorate the case with red caviar. If you want, you can walk along the edge of the plate with balsamic sauce - for aesthetics. Done!
