Ingredients :

1- Ingredients for cake:

12 pieces of digestive biscuits
One-third cup of butter

2 - Ingredients for cheese:

One packet of soft cream cheese
A large cup of cooking cream (for desserts)
A cup of white sugar
4 large size eggs
Pinch of salt
Two teaspoons of lemon juice
A teaspoon of vanilla

3-Ingredients of Mulberry Sauce:

Two cups of mulberry
A quarter cup of sugar
Two teaspoons of lemon juice

Method :

Cake Action Steps:

  1. Bring a baking tray and grease it with butter.

  2. Put in bottom of the tray an aluminum foil and make sure to cover all sides with it.

  3. In a other dish, crack the biscuits very small pieces, then mix them with butter well until they are combined.

  4. Place the biscuits in the tray and make sure to cover all the sides, until they're equal in all directions, and then press it on.

  5. Put the tray in the refrigerator for a full hour, until you finish preparing cheese and sauce.

  6. Remove the tray from the refrigerator, then place in a preheated oven at 350 degrees for 8 to 10 minutes, then lift out from the oven and let it cool.

Cheese Action Steps:

  1. Bring a large bowl and using a whisker machine , put cream cheese, cooking cream, sugar, salt, vanilla and lemon juice, and whisk at medium speed for 5 minutes.

  2. Add the eggs to the previous mixture one by one and and make sure to whisk at quiet speed when you are pouring the eggs, until you will get a smooth cream.

  3. Then put the mixture on the cake that you left to cool.

  4. Bring a small pan or tray containing 5 cm of water, put the cake over it (water bath) and then put them in the oven together for 55 minutes, until the cake and cheese rise, then lift out to cool. ( Make sure when you open the oven door in slow movement so the cake does not hit by the air suddenly) .

  5. Leave the cake to cool for a full hour, it must cool completely before transfer to the refrigerator.

  6. Leave it in the refrigerator for a full night before you put the sauce.

  7. Before serving, leave it for half an hour at normal room temperature and finally place the sauce.

Mulberry Sauce Action Steps:

  1. Mix the ingredients of the sauce in a bowl and continue cooking for 10 minutes until the berries thickness.

  2. Leave the mixture to cool, and cool completely before you pour it over the cake.

Excellent Recipe! I do love a Cheesecake - but I've got to say that Nothing comes close to a Vanilla Cream Sponge Cake for me. So simple and so easy to make but so so tasty. I'm getting Hungry just thinking about It!
