Tasty Appetizers to Get Your BBQ Started

Today I'm sharing how we prepare our extremely popular Jalapeno Mushroom Poppers. We serve these as appetizers while folks are waiting on our amazing BBQ recipes. They are easy to make and don't cost much for the ingredients. Total time to prepare and cook is about 30 minutes or less depending on how well you multi-task (or in my case, how much beer I drank).

We have a full video walking you through the process below, but here are some things you'll want to get started.

Ingredients:

White "button" mushrooms
Jalapeno peppers (jarred or fresh)
White cheese (your choice)
Sausage/Salami (again, your choice)
Black pitted olives
Olive Oil
Garlic Powder

Tools:

Cutting board
Knives
A few bowls
Toothpicks
Baking pan or bowl
Cheese grater
Pastry/Basting brush
Oven (I don't recommend a microwave)

Prep Work

  1. Beer or wine - I find that cooking is much more fun when I have beer, but maybe that's just me.
  2. Wash your mushrooms and remove the stems. Save the stems because we need them.
  3. Grate your cheese.
  4. Slice the olives in thirds (so that you have 3 olive rings out of each).
  5. Slice your sausage or salami thinly (you'll need one slice for every 2 mushrooms).
  6. Add about a Tablespoon of olive oil into a bowl and add 2 teaspoons of garlic. Mix with the pastry brush.
  7. Slice the mushroom stems into halves (or thirds if they are large). Hint: you will have extra stems, but they cook up nicely with butter and garlic in a skillet if you want to sauté them.
  8. If using fresh jalapeno, slice them into rings (we use jarred jalapenos that are already sliced)

Assembly

  1. Brush the garlic and oil mixture on the mushrooms making sure to coat the inside and outside.
  2. Insert jalapeno rings into the mushrooms. If necessary, cut the jalapeno so that it will fit.
  3. Add cheese to the top of the mushroom (with jalapeno inside). The cheese is malleable enough to create a small clump/ball.
  4. Take 1/2 a slice of salami/sausage and place it over the cheese, take a mushroom stem and place it over the meat, and pin it all together with a toothpick.
  5. Take an olive slice and place it over the toothpick on top.
  6. Place the completed mushroom in the baking pan/sheet.
  7. Repeat with all the mushrooms.

Baking and Serving

  1. Bake in the oven for 12 - 15 minutes at 150 degrees celsius (about 250 F.).
  2. Remove the mushrooms when you see the cheese mostly melted. Don't let it become liquified.
  3. Let the mushrooms cool in the container for about 2 - 3 minutes and then serve hot.

Note: The mushrooms will still be delicious even when they cool down about, but hot food is always better.

Showing them came with many challenges such as finding the right ingredients or substitutes, having the correct tools, and then experimenting with both of these to recreate the great tastes of Kansas City style BBQ.

Our project has led to the launch of our own catering company, which can do indoor and outdoor events, parties, etc. We have designed and built our own grills and smokers, bottled our own sauces and rubs, and even built some American backyard games such as "Washers" and "Cornhole" (bags). We plan to start printing and selling "coozies", shirts, and hats soon.

That's great. Never thought of adding Jalapeno's to a mushroom cap before... Definitely going to give it a try this summer at the next party... might even have my own little party :-) just to try it out.
