Salted fish + Waterspinach and Quail eggs + Homemade sambal
Yesterday I made water spinach with quail eggs together with some side dishes. These are what we eat in Indonesia. I also made my own sambal/ chilli sauce.
This is Tumis Kangkung, spicy waterspinach with quail eggs. The water spinach we call Kang Kung and is imported from Thailand. It looks similar to the spinach we know but this is more crunchy and has a nice bite.
I didn't eat salted fish for a very long time. Too long actually. This is salted dried anchovy. They are very salty so you better eat it in small pieces together with rice. I prefer a different fish but this was the only available one at that time.
Homemade chilli sauce! This is called Sambal Terasi. I never thought I would make my own chilli sauce and guess what? It tastes so good! So much better than those chilli sauce from the Asian grocery shop. This chilli sauce goes very well together with the salted fish.
The last side dish is fried tempeh. Tempeh is made of soy beans. Great to dip it in the homemade sambal. Of course we eat all these with rice, otherwise it would taste salty and weird. Just think of eating only the top of your pizza or just the spaghetti sauce without the pasta. Weird right?
Ingredients Tumis Kangkung
18 quail eggs
400 gram kang kung/water spinach
1 large tomato
5 cloves of garlic
2 large onions
4 red rawit peppers
1 Maggi chicken broth
150 ml water
Instructions
Boil quail eggs in water, salt and vinegar for 5 minutes. Cool down the eggs in cold water and peel them.
Wash and drain kangkung and cut the kangkung into 5 cm length. Mince garlic and onions. Cut the rawit chilli peppers in pieces.
Heat a wok with sunflower oil and stir fry onions, garlic, tomato, chicken broth and rawit chilli peppers till for about 15 minutes or till it is fragrant.
Add kangkung first and stir fry for 10 minutes. Add the quail eggs at the end and stir fry for another 5 minutes.
Ingredients Sambal Terasi
0,5 table spoon shrimp paste
1 large tomato
4 table spoon raw chilli paste
1 table spoon lemon or lime juice
Instructions
Heat a small pan with sunflower oil and stir fry the tomato pieces for 5 minutes. Add the remaining ingredients and stir fry for 30 minutes.
Side dishes
Cut the tempeh in slices and fry them in deep oil till light brown. Drain them on a paper napkin and sprinkle a bit of salt.
Wash the salty fish and dry then. fry them in deep oil for only 1,5 minute. Drain them on a paper napkin. Cook pandan or jasmine rice in a rice cooker.
That looks tasty and healthy, would like to try that fish i mean is not a common dish and looks very different of how people do it in my country. Regards
