Food time: Ekpang Nkukwo (Nigeria Dish)
Today I choose to share a recipe I learnt from a friend 2 years ago. It is an Efik dish. Let's stop talking and start cooking
Source
Firstly the ingredients
Cocoyam or Wateryam
Fresh Cocoyam Leaves or Pumpkin Leaves or Spinach
Crayfish
Assorted Meat
Dry Fish
Periwinkles (still shelled)
Prawns or Shrimps
Curry leaves
Spices
Onion
Fresh Pepper
Palm Oil
Now we are going to turn all this ingredients int that delicious dish
Firstly we have to boil our fish and assorted meat with seasonings. We take our shelled perwinkles, cut of the tail end of it, wash it thoroughly and parboil with salt. Peel the cocoyam, wash and grate it. Mix thoroughly to ensure a smooth paste. Add salt and little water if the mixture is hard. Wash up the leaves, adding some salt to the water. Pour some measure of palm oil into a clean pot and rub on the sides of the pot to prevent sticking and premature burning. Cut up the paste and wrap in the leaves one after another.
Continue laying up until the pot is half filled. Pound a good measure of crayfish, fresh Pepper and onions. Shred the left over vegetables and add spices, plus already boiled assorted Meat, fish and periwinkles.
Allow to cook for ten or fifteen minutes before stirring. Add the remaining ingredients and allow to cook for another ten minutes. Bon appetit
