Materials needed
100 grams of pare
3 eggs
Coriander leaves for decoration
Spices
½ teaspoon of light soy sauce
½ teaspoon sesame oil
1/8 teaspoon ground pepper powder
1/8 teaspoon salt
2 tablespoons of cooking oil
How to make
Cut medium sized pare (± 100 grams) to 1/3 of its length. Split into 2 lengthwise. Remove the seeds using a spoon, then cut into pieces as thick as 5 mm. Put it into a bowl.
To reduce the bitterness, sprinkle salt. Flatten the salt on each piece. Let stand for 10 minutes. Rinse pare in running water, then drain and set aside.
Enter light soy sauce, sesame oil and pepper powder in a clean bowl. Stir with a spoon until well blended. Break the eggs, then shake slowly using a fork or whisk until the eggs and seasonings are well blended.
Heat a skillet with a large flame. Add 1 tablespoon of cooking oil. Saute the pieces of pare until slightly wilted (± 1 minute), or until the bitter melon appears slightly transparent. Spread the pare evenly, then pour 1 tablespoon of cooking oil.
Beat the egg mixture and spice once more (to produce air bubbles), then pour over the pare pieces evenly over the whole bit of bitter melon. As the edges of the omelette begin to harden, reduce the heat to moderate. Do not tamper with omelets while cooking. When the bottom of the omelette is hard enough, turn the omelette and cook until cooked evenly.
Once cooked evenly, place the omelette on a plate, then decorate it with cilantro. Immediately serve.
