Today's Sustainable Feast in the Garden of Eden

It is another great day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today, and because we have below freezing weather we prepared the food indoors on our wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen! We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

Today we made a delicious, traditional southern American meal with bacon wrapped turkey meatloaf smothered in cheese, garden salad, cauliflower with bell peppers, and creamy mashed potatoes!


We started our day's feast with a beautiful garden salad. For this lovely creation, we started with a bed of mixed greens, and we loaded them up with yellow peppers, sliced onions, raspberries, apples, dried raisins, chopped pecans, deep red beets, and creamy, rich avocado slices!



The daily salad is a staple on our sustainable dinner table! It's wonderful to enjoy fresh, raw, bright foods even in the dead of winter. Even though we have a huge serving of these fruits and veggies every day, it's never exactly the same thing twice! Between the wonderful toppings and unique dressings we can make out of our huge selection of homemade vinegars, oils, and extra sauces like liquid aminos, tahini, sriracha, we create unique combinations of flavors, textures, and colors every day!



For a side, we lightly sautéed a big skillet of cauliflower with colorful bell peppers and onions.



Then we made one of our favorite dishes - mashed potatoes!!! We usually have LOTS of potatoes in abundance, and sometimes we eat mashed potatoes multiple times in one week. These are very easy to make, hearty, and comforting. We simply boil chopped potatoes until fork tender then mash them with a little bit of the cooking water, milk, butter, salt, and pepper, and sometimes decadent extras like sour cream, cream cheese, parmesan cheese, garlic, and chives when we're in the mood for something really rich.



For tonight's main event, we enjoyed a big bacon wrapped turkey meatloaf smothered in cheese!! Our secret ingredient for this meatloaf is chicken livers; we cook them and add them to the ground turkey to get a huge punch of nutrition without adding a significantly different flavor.



Today's sustainable feast was a wonderful spread with plenty of food for everyone!

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indor wood burning stove in action -it cooks our food, warms our communal space, and heats water for hot showers all at the same time!

I liked the salad a lot. In Venezuela we do not have that kind of berries, for which fruit could it be substituted?

Yes sustainability is one of the main reasons we exist, and we hope to inspire others to engage more sustainable relationships with not only food, but every aspect of their lifestyle!

Do you get any berries in Venezuela? Blueberries, blackberries, or strawberries would be nice. Oranges, pineapple, kiwi, or grapes are other fruits that taste great on salad! The thing about salads is that you can combine almost any veggies and many fruits and always get something delicious!

I agree with you. the fruits go well in the ensalda. Yes, I will choose to add strawberries.
