Tips for gluten-free cooking and an all-purpose gluten-free flour blend
First off, here are some resources where I've gotten some very good recipes:

The AP flour mix I use is from one of gluten-free girl's books. It is:
400 g millet flour
300 g brown rice flour
300 g potato starch
Even though a lot of the recipes call for various kinds of flour blends I've had good results with just using the above mixture. I've even used this blend to make fried chicken and then some quick flatbreads/biscuits using the leftover buttermilk brine and dredging flour.
