🍕Surviving Quarantine By (Healthy) Snacking! 4 Munchable Recipes! (Vegan/Gluten Free)🍕

So you're at home and "there's nothing to do..." I beg to differ my friends.

Ahh, this is the most common complaint I am hearing during these times...

"There is nothing to do."

My immediate thought is... well, there are definitely many 'a snack to make!

I'm a homesteading witch don't you know so I know a thing or two about being home in isolation;) so I could give you a list that never ended up things you COULD do...

  • plant a garden,
  • pickle some cucumbers,
  • learn to sing,
  • meditate,
  • read that book you've been wanting to read but "haven't had time"
  • do 20 squats while holding a banana in each hand...

Just to name a few things... but I understand, times are uncertain and the energy in the air is stiff with the extra emails and instant messages invisibly floating through the atmosphere so... never fear...

SNACK TIME IS HERE!


Spicy, Crunchy Eggplant Bites:

  • 3 eggplant (coined and steamed)
  • 1/2 cup chickpea flour
  • 1/2 cup coconut flour
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp cayenne
  1. Pour the coconut milk in a bowl
  2. In another bowl, mix the spices with the chickpea flour
  3. Dip the eggplant coins in the coconut milk and then cover them in the flour mixture, make sure they are all covered and place on a lined baking tray or into the air fryer!
  4. Bake for about 15 minutes on 350'F or until crispy
  5. Top them with your fav toppings! I used hot sauce, vegan cheeze and eggplant bakon!

Crusted Sesame Cauliflower Bites

  • 1 head of cauliflower (florets only, steamed)
  • 1/2 cup chickpea flour
  • 1/2 tsp pink Himalayan sea salt
  • 1 tbsp roasted sesame
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/2 cup coconut milk
  1. Steam the cauli
  2. Pour the coconut milk into a bowl
  3. In another bowl, mix together the flour, sesame seeds and spices
  4. Pick the florets up and get them wet in the coco milk
  5. Cover the wet florets in the dry mixture
  6. Place on a baking tray and bake at 350' for about 15 mins or until crisp

Whipped Avo Dip

  • 1 avocado
  • 1/2 tsp garlic powder
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp black pepper
  • 1 tbsp tahini
  • 1 tbsp vegan cheeze
  • 1 tbsp eggplant bakon

Mix everything together in a bowl and top with the cheeze and bakon!


Eggplant Bakon

  • Eggplant skin (peeled off)
  • 1 tbsp Bragg's liquid aminos
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp liquid smoke
  • 1 tsp paprika
  • 1 tbsp coconut oil
  1. Place everything into a container with a lid
  2. Close the lid and shake
  3. Place the pieces on a lined baking sheet
  4. Bake until crisp

Now you have a bunch of yummy snacks that you made yourself to hang out and munch on! Hopefully that'll keep you busy for a little while! :)
