Food for tryouts: Rae's Edamame rice.

Edamame is fresh green soybeans boiled as a vegetable. This is what it looks like below;

I actually couldn't get it here, so I had to work with green beans, which is this;

This is basically a very simple rice takes less than an hour 30 mins to prepare. For 2 servings, all you need is:

  • 1 cup of rice
  • ‎a single scallion( this is spring onions), should be sliced with the white part and the green part seperated
  • ‎1 carrot, diced
  • ‎3 pieces of green beans/ 1 cup of canned edamame, sliced, if frozen thaw it first.
  • ‎1 clove of garlic, chopped
  • ‎1 bell of green pepper( you can use or add red/ yellow pepper), chopped
  • ‎2 to 3 tablespoons vegetable oil
  • ‎2 to 3 large eggs, break into a bowl
  • ‎2 tablespoons of soy sauce

This is a try out, so I would advice you do this with small portions as I have stated above before going all out for family, friends and loved ones.

Wash your rice thoroughly with clean water, then boil ( if you can't boil rice, all you need to do is add 2 cups of clean water to your 1 cup of rice, note: not hot water), when your rice starts to boil, add salt to taste. Boil until ready and place in a strainer to drain and cool.

While your rice is boiling you should get on with your cutting, chopping and slicing of your veggies.
Below is my ingredients all prepared and ready for mixing.

Heat the vegetable oil in a large skillet( that's a frying pan) .

Add the scallion whites , bell peppers, carrots and cook until just starting to soften add a little salt, some ground pepper and 2 cubes of knorr, cook for a few minutes.

Stir in the edamame(green beans for me) and garlic, then cook for 30 seconds.

Add the eggs into the skillet and stir-fry them quickly to scramble them, if you like eggs and want them to come out bigger let it fry a little before stir frying.

Add the soy sauce

then add the rice and stir it around to cook it for a couple of minutes.

Add more soy sauce if you like. Taste to see if it needs more seasonings.

Then you are done.

Serve garnished with the scallion greens.

Well, I garnished mine with scallion greens, carrots, a little scrambled eggs and fried plantains. 😘😋......

It was sumptuous, you should definitely try this out this week. And it's a good food for those avoiding beef on Friday due to the Lenten season. Andddd, it can serve as a vegetarian meal.
