Cooking Recipes: Greek Salad

in #food6 years ago

Hi guys, how are you? What's cooking in your kitchen today? Some days I'm just not in the mood for cooking, does it happen to you as well? Well, at times like this, I often just make a salad. And one of the salads I've come to love is a Greek salad, today's recipe.

You will need:

Salad Ingredients

. One lettuce head, torn to biteable pieces
. Three Plum tomatoes, seeded and coarsely chopped
. One European cucumber, peeled and coarsely chopped as well
. One medium-sized red onion sliced into thin rings then soaked in a bowl of ice water for 10 minutes
. One small capsicum/green pepper cut into thin rings
. 100 grams Kalamata olives
. 120 grams crumbled Feta cheese

Dressing Ingredients

. 90 ml olive oil
. 1.5 tbsp fresh lemon juice
. One tbsp Apple Cider Vinegar (ACV)/or whatever vinegar is readily available
. Two garlic cloves, crushed
. One tsp dried oregano

Still with me? Good, now:

. Thoroughly mix the dressing ingredients and season to taste
. Drain the onions and dry them with a paper towel
. Excluding the cheese, combine all the salad ingredients in a large bowl
. Add the dressing and toss lightly
. Sprinkle the cheese on top and serve.

Just 15 minutes and you have enough salad for six, no hustle no bustle. Plus, did I mention it's delicious? Cause it is! Enjoy and have a relaxed day :)
