Looking for a quick, easy and healthy vegetarian dish for dinner? Here's one to try: Eggplant, Radish, and Asparagus Stir Fry

Ingredients:

  • 1/2 cup Raw Asparagus
  • 3/4 cup Raw Eggplant
  • 1/4 cup Raw Radishes
  • 1/2 tbsp Oil, sesame
  • 1 tsp Soy Sauce, low sodium
  • 1 tsp Vinegar, rice
  • 1/4 tsp Crushed Red Pepper Flakes

Preparation:

  1. Prep the ingredients and set aside: Thinly slice the eggplant and radishes. Chop asparagus into bite-sized pieces.
  2. Heat a skillet on medium-high heat and add sesame oil.
  3. Add eggplant, radishes, and asparagus along with the soy sauce, rice vinegar, and red pepper flakes. Stir.
  4. Saute until vegetables are tender. Remove from heat and enjoy!
