Keto roasted veggies
This is an awesome recipe, I made so much of it that I had leftovers the next day and ate it cold! You can use any vegetable that is low carb, I used peppers, mushrooms, zucchini, and onions. I did throw in a beet just because I love beets! Chop it all up and throw it in a bowl adding some grapeseed oil, garlic, salt, and pepper. Put it all on a pan evenly and roast it in a 450 degree oven for 35-45 minutes depending on how crunchy you want it. I served this with mini burgers and my family went crazy for it, even my 12 year old!!
