Every day can be special days at your table. In order for you and your family to enjoy each meal as if it were a great event, all you have to do is pay a little attention to preparation and planning. A great meal can be prepared with the most common ingredients!

*MENU:*

Stewed artichokes.
Surprise rice
Chicken breasts on toast.

So get to work:

SURPRISE RICE

Ingredient:

1/3 cup chopped onion.
• 6 tablespoons of butter.
• 2 1/4 cups of rice.
• 4 1/2 cups of chicken broth.
• ½ cup of white wine.
• 3 mincemeat (cohombrillos) minced.
• 2 minced hard-boiled eggs.
• 1 cup of mayonnaise.
• ½ cup of olives without seeds.
• 1 can of anchovy fillets.
• 1 ½ cups of grated mozzarella cheese

Preparation

Fry the onion in the butter until golden brown. Put it in a saucepan along with the rice and chicken broth (plus the salt you need). Cook the rice as you usually do (if the one you use requires a different proportion of liquid, adjust the amount of broth to the amount of water you normally use). When ready, add the most ingredients, reserved ½ cup of mozzarella, some olives and anchovy fillets. Put the mixture in a mold. Spread the remaining cheese over the rice. Cook for 20 minutes more or half an hour more in a preheated oven at 175 ° C (350 ° F), until the cheese is browned. Garnish with olives and anchovies.

TOASTED CHICKEN BREASTS
Ingredients
4 chicken breasts cut into halves.
• 170 grams of mushrooms (mushrooms).
• 6 chicken liver.
• 8 tablespoons of butter.
• 3 minced garlic cloves.
• 2 cubes of chicken broth concentrate.
•Salt and pepper to taste.
• 8 toasts.
• 3 tablespoons of flour.
• 3 tablespoons of minced parsley.

Preparation:
Sauté the livers, minced, in 2 tablespoons of butter, with the olives, until golden brown. Dissolve cubes of concentrated broth in ½ cup of hot water. Dissolve a spoonful of flour in that liquid. Add the mixture of the livers and continue cooking over medium heat and stirring constantly to form a sauce. Remove from heat and keep warm. In addition, brown the garlic and mushrooms in 2 tablespoons more butter. Add salt and pepper to taste. Season the breasts with salt and pepper, sprinkle with flour and cook with remaining butter over low to medium heat, in a saucepan over the stove (add more butter if necessary). When they are tender and golden brown, remove them from the heat. Arrange the toast in a dish with the breasts halves on top. Place the mushrooms in the center and pour over the liver sauce. Sprinkle with parsley.
