Chinese Qingming Festival is coming: time for the “Green dumplings ”
Hi, I am Jon from China and willing to reveal the historic Chinese yummy food that most of you probably haven’t known.
The “Green dumplings” is associated with a solar term—cold food. People can't eat hot foods on that day in the ancient time. The reason was that common people mainly memorize a talented minister named Jiezi Tui that died in a man-made forest fire. On the day of his death, everyone banned fireworks to commemorate. Every time on that day, people don't make fire and cook, just eat cold food. In the south, they mostly eat the “Green dumplings ” and put the Ai leafs behind the house to show their nostalgia. With the day goes by, people gradually begin eating the “Green dumplings ” on the Qingming festival that memorize ancestors in China.
Ingredients: sugar, black sesame, peanut, brown sugar, oil paper, water, glutinous rice flour, baking soda, fresh Ai leaf(Planted in China )
Spread the peanuts on the baking tray, preheat the oven, 175 ℃ of the upper and lower tubes, put the tray in the middle and bake for 10 minutes.
When the peanuts get cold, then put off the skins
Black sesame seeds are fried in the pot for 2 to 3 minutes with small fire, and keep stirring so as not to be over fried.
Peanuts and fried black sesame seeds crushed in a cooking machine, put appropriate amount of white sugar and brown sugar, and mix them to be the fillings of Green dumplings .
Wash the Ai leaf at first
Prepare the baking soda
Put appropriate amount of water to the pot. After the water is boiled, put in the cleaned Ai leaf for 2 to 3 minutes. Before the flame is extinguished, add a little baking soda, stir evenly, and turn off the heat.
Put the cooked leaves into the blender, add appropriate amount of water and break them together.
Pour the glutinous rice flour into a large container, then add the AI juice slowly and knead dough at the same time. Don't be afraid of the heat, the temperature of AI juice is about 80 ℃. The process of kneading can not be anxious, but to be evenly. After the Ai paste is ready, it is ready to make "Green dumplings". It's better to cover the paste with a wet handkerchief to seal them much more easily.
Grab a small group of Ai, like making buns, put into the fillings, and seal them.
Then, here it is. Since the banana leaves, the cilantro leaves, and the corn leaves are not prepared, they can only be replaced with oiled paper, and the oiled paper is cut into small sheets, and put the "Green dumplings"on top.
Pour cold water into the pot, after the water is boiled, steam them for 8 minutes.
